1: So let me start with your childhood, you know. What kind of childhood did you have, you know, that might have led to your, to becoming a chef?
Morten Heiberg :
I had a wonderful and safe childhood, with very careful and lovely parents. In early age I leaned to respect other people, be nice and kind to people and I leaned to enjoy life.



2: When you were child, what kinds of desserts did you like?
Morten Heiberg :
Mostly I liked to make ice-cream, puddings and pound cakes. My favorite was Chocolate Mousse.…



3: Your work of dessert is often associated with a picture book of Hans Christian Andersen.I think that it's so cute that everyone likes it. When you make a dessert, how much do you visualize?
Morten Heiberg :
Sometimes, and sometimes not. It depends on my mood, on the day and on theme. Sometimes I need to visualize, some other times things are just happening when I start to work with the ingredients…



4:Does reading inspire your creativity?
Morten Heiberg :
Yes, but even more inspiration I get of being together with children. Listen to their story, observe their way of talking and explaining… I really enjoy spending time in the morning in my children’s kindergarten, to play with the kids… often I spend 1 hour there in the morning, and it gives me a lot of motivation, pleasure and fun. Fun is important for me!



5: How do you get inspiration for your dessert?
Morten Heiberg :
I need 200 pages to explain this… But in brief, I get inspiration from everywhere...



6: When did you first feel like a grown-up?
Morten Heiberg :
I have not felt that yet… :-)
I am just a big boy...



7: What beauty means for you?
Morten Heiberg :
Beauty is so many things. Sometimes beauty means a lot, sometimes it is not in focus for me...



8: What is your favorite time of day?
Morten Heiberg :
I enjoy the evening… I like the silence after dark…
I enjoy reading books, talking to friends, discussing new ideas with my team and often I do this in the evening.



9: What is the appeal of dessert for you?
Morten Heiberg :Simplicity.


10: Do you play any sports?
Morten Heiberg :
Running, swimming, cycling, tennis and motorsport.



11: What kinds of birds do you like?
Morten Heiberg :Swan.


12: Tokyo's GRANSTA DINNING, you have the Patisserie KIHACHI & DESSERTCIRKUS, would you say, as a creator, as a chef, about this collaboratoion, how have you a positive effect for your works?
Morten Heiberg :
I have the deepest respect for Mr. Kihachi, and am proud to work together with him and his team. I am sure the location on Tokyo Station is one of the best in Tokyo, and for my DESSERTCIRKUS this location is good and important, and being able to make collaboration with patisserie KIHACHI is great for us.



13: The Patisserie KIHACHI & DESSERTCIRKUS, is it a strength or a challenge that you have different cultural back grounds?
Morten Heiberg :
It is a great and positive challenge! I like and enjoy it!



14: Do you like Japan? Could you give us some of your good memories of Japan?
Morten Heiberg :
I LOVE JAPAN!!
Japan is my 2. home, my home away from home and the place on Earth I love to be!
I have seen and enjoyed so much in Japan over the last 4-5 years. So many good memories.



15: What are the best things about your country?
Morten Heiberg :
Denmark is a small, pure and safe country. We enjoy design, good quality, food, Family and Hygge…
We are very focused on slow food, organic food and fair-trade. We are very close to each other, and spend a lot of time with our Family and friends. I like that.



16: Where is your favorite landscape?
Morten Heiberg :
The Ocean and the Forrest. I love the Nature.



17: If you could travel in time, which event or period would you visit?
Morten Heiberg :
The Moon…
(or Mount Fuji… unfortunately I have not yet been on the top…)



18: What have you been interested in recently?
Morten Heiberg :
Cupcakes, cupcakes and cupcakes… I have spent a lot of time this summer, making a new big cupcake cookbook…
Also I am deeply involved in a project in Denmark, where I and some of my chef-friends is establishing a cooking school for prisoners. We want to teach people, who the society has given up, people who have been in prison for more than 10 years, a different angle on life. We would like to prove, that through cooking, pleasure and a better lifestyle, we can direct people in another direction of life…



19: Please give us the message for Japanese fans.
Morten Heiberg :
I love everything about Japan! From the minute I leave Japan, each time I visit it, I miss it!! I miss the people, the smell, the light, the design, the quality, the friendliness, the opportunities, the beauty of the country - and the food!
I am so proud of being making DESSERTCIRKUS in Japan!
